At the heart of New Shanghai are ancient family recipes learned in Shanghai and passed down from generation to generation. They travelled through kitchens and across decades before arriving, intact, at our tables.
The room hums the way a Shanghai street does — ambient, buzzing, alive. At the centre of it all is the live dumpling-making theatre, where our chefs fold the city's famous soup dumplings by hand, in full view, hundreds of times a night.
